The Story
Papa's Pilar 24 Year Old Solera Blended Dark Rum. Hemingway Rum Company, Key West, Florida β nine premium rums hand-selected from Barbados, the Dominican Republic, Panama, Venezuela, and Florida, solera-blended and aged up to 24 years in bourbon barrels, port wine casks, and Spanish Oloroso sherry casks, inspired by Ernest Hemingway's life between the Florida Keys and the Caribbean.
In 1934, Ernest Hemingway purchased a custom boat from the Wheeler Shipyard for $7,495 and named it Pilar. He used it to fish the Florida Straits, hunt German U-boats in Caribbean waters during World War II, and travel between Key West and Cuba across the waters he loved. In 2017, the Hemingway Rum Company β operating in partnership with the Hemingway estate, whose family donates 100% of royalties to organizations embodying adventure, literacy, and conservation β opened its distillery and experience center in an 8,000 sq. ft. tobacco warehouse on Simonton Street in Key West.
Papa's Pilar Dark draws from nine premium rums spanning five countries and three continents, assembled via a solera blending process in which older rum continuously feeds younger barrels, creating layered complexity across generations of casks. The bourbon barrels provide vanilla and caramel; port wine casks add dark fruit and sweetness; Spanish Oloroso sherry casks finish the rum with oxidative richness, dried fig, and nutty depth. The result is a globe-spanning sipping rum built to reflect the breadth of Hemingway's own travels.

Frequently Asked Questions
- What does Papa's Pilar Dark taste like? Vanilla, cinnamon, dark roast coffee, and honey on the nose. Rich and earthy on the palate with almonds, apricot, bourbon spice, toffee, vanilla, and molasses. Robust, velvety finish with red fruits and dark coffee.
- What is the Hemingway connection? Papa's Pilar is produced in partnership with the Hemingway estate. "Papa" was Hemingway's nickname; "Pilar" was the name of his beloved 1934 fishing boat used to travel between the Florida Keys and Cuba. The family donates 100% of their royalties to organizations supporting adventure, literacy, and conservation.
- What does "solera blended" mean on the label? The "24" on the bottle indicates the oldest rum in the solera system is 24 years old. In a solera, older rum continuously feeds younger barrels β the final blend contains rum of various ages layered through that continuous process, not a single 24-year vintage.
- What is the triple-cask approach? The rum is aged in three cask types: ex-bourbon barrels (vanilla, caramel, oak), port wine casks (dark fruit, sweetness), and Spanish Oloroso sherry casks (oxidative richness, dried fig, nuts). Each cask type adds a distinct layer of complexity.
- Is Papa's Pilar good for cocktails? It is primarily a sipping rum, but its richness and complexity work well in spirit-forward cocktails β a Rum Old Fashioned, Rum Manhattan, or a Hemingway Daiquiri built around its own profile.
