Don Chucho, whose full name is Ignacio Parada, is the visionary mezcalero behind Nuestra Soledad Santa MarÃa Zoquitlán Mezcal. With the assistance of his son, José Parada Valera, they carefully harvest wild and semi-cultivated agave plants from the diverse and vibrant mountain soils found right in their backyard. Don Chucho is a true pioneer, having joined the Casa Cortés collective of mezcal producers in 2007, and he now takes pride in imparting his expertise to the next generation, working side by side with his son to craft exceptional mezcals for Nuestra Soledad and El Jolgorio.
