Calvados distilled by Didier Lemorton at La Baill.e F.tu in Mantilly, in the Domfrontais Region of Normandy • Distilled from pears (up to 80%) and apples • Single distillation occurs on a traveling, wood-fired column still • Aged 4–6 years • Rich, oxidized aromas of pear permeate along with a touch of vanilla and mint. A slightly viscous palate exhibits gentian and cocoa with structured tannin and great length
