Kavalan β single malt Taiwanese whisky matured in sherry-seasoned oak casks from the Kavalan Distillery in Yilan County, Taiwan β where the sub-tropical climate and warm temperatures accelerate spirit-wood interaction in a way that produces remarkable complexity at much younger calendar ages than Scottish or American maturation.
Kavalan was founded in 2005 in the Yilan County of northeastern Taiwan, in the foothills of the Snow Mountain range. The distillery draws water from the mountain snowmelt and operates in a hot, humid climate where the angels' share (evaporative loss) runs at 12β15% annually β three to four times the Scottish rate. The accelerated maturation means Kavalan's 5β7-year-old whisky can carry the complexity that takes Scottish distilleries 12β18 years to achieve.
The Sherry Oak uses the same first-fill sherry casks normally reserved for Kavalan's cask strength releases, diluted to a standard ABV with the distillery's mountain spring water.
