Glenmorangie — Glenmorangie's most distinctive and unusual expression, made with a portion of 'chocolate malt' barley — roasted at high temperature to coffee-like intensity — alongside the standard barley used in the rest of the range, producing a depth of roasted grain character completely absent from every other Glenmorangie expression.
Chocolate malt barley is roasted at temperatures typically used in coffee and cocoa processing — the heat produces bitter chocolate, espresso, and dark toffee compounds in the malt that carry through distillation into the new make spirit. Applied to Glenmorangie's naturally delicate, floral spirit base — produced by those famously tall stills — the chocolate malt creates a paradox: a whisky that is simultaneously light and dark, delicate and intense.
The oldest and rarest casks in the Glenmorangie warehouses are selected for Signet maturation, contributing the additional complexity that the unusual malt character requires to reach equilibrium. Non-chill filtered.
